Yeah for chili weather!!

Our first official experiment was making chili.  And it was DE-LICIOUS!  It had a bit of a kick and was chocked full of veggies.  What a yummy way to have dinner.  Here is the recipe for you:


Heather's Uptown Chili


3 tbsp Olive Oil
2 lbs ground turkey
1 lb baby bella mushrooms (minced)
2 lg red bell peppers (chopped)
1 white onion (chopped)
4 cloves garlic (chopped)
3 tbsp Mesquite grill seasoning
2 tbsp Worcestershire sauce
2-4 canned Chipolte peppers (seeded and chopped)
1 tbsp adobo sauce (from the chipotle peppers)
1 tbsp ground cumin
1 can beer or stock
1 can (15oz) black beans
2 cans (15 oz) crushed tomatoes
1 c stock (flavor of your choice)
8 oz smoked gouda (mmmmmm)

(minced mushrooms)

1. Brown meat on high with 1.5 tbsp olive oil until fully browned and remove from large pot

2. Turn heat to med-high and add 1.5 tbsp olive oil.  Add veggies and cook until tender

3. Add meat back in 

4. Add Worcestershire sauce, cumin, grill seasoning, chipotle peppers, and adobo.  Stir.

5. Add beer or stock and reduce for 2 minutes

6. Add remaining ingredients (minus gouda) and simmer for at least 10 minutes.

7. Put in your bowl, top with gouda, and enjoy!

(my daughter Claire (4 days old here) decided to join us.  She slept thru the whole thing, except when it was time to eat.

our first adventure...

will be making chili next Thursday.  We also have plans to make some kind of recipe collection holder to keep all these great ideas together.  I just hope this baby pops out before then.  Can't wait to get this underway with some yummy chili (after yummy hole in the wall Mexican tonight).

proyecto numero uno

So, I'm just a tad bit excited about getting this project underway.  I stayed up really late crafting (doing anything after 10:30 besides watching t.v. at this point is really late).  I wasn't able to get it all finished since it was late and I didn't have all the pieces but I just couldn't help myself.  Here's a sneak preview of what I plan to make before our first meeting of the minds.  Hopefully baby Claire (and 2 year old Mackenzie) will cooperate with the plan after she is born (which is any day now).  Maybe there will be a special prize if you can figure out what I'm making.
